Last night was bean and lentil tacos. Simple, cheap and good.
I had somewhere to be last night, so it was a 2 person job - but really didn't have to be.
Early in the morning I put black beans in the crockpot, to replenish my frozen bean stock. While I was gone, Marty cooked 1 cup dry lentils in beef broth (using Better than Bouillon). When I got home, I scooped out about 2 cans worth of black beans and added them to the to of cooked lentils, added the last of a frozen bag of corn, a few finely minced cloves of garlic, and seasonings to taste. (Oregano, cumin, paprika, chili powder, salt and pepper.) We served it in taco shells with normal taco fixins', but you could easily use in quesadillas, on taco salad, as burrito filling, etc.
